Don Stuart Brixius, Ellen Prentice’s father, bought Finca de Dios in 1972 for keeping horses. A few years later, he was transferred for work and his daughter Ellen was left in charge of the farm. She’d noticed that the farm produced coffee and decided to start planting more and selling it, and over time this became their purpose. At first the coffee was sold as a commercial coffee, but over time the family specialized production and processing practices. Today, Ellen and her daughter Ashley select the specialty lots, cupping and making a blend of the varieties that the farm produces, such as Typica, Caturra, Catuaí, and Pacas.
Sustainability is of utmost importance to the Prentice Family. They’re committed to producing some of the best specialty coffee from the region, while supporting their employees, investing in their community and caring for the environment.
Coffees are planted without use of herbicides. After a 24-36 hour water fermentation, coffees are sun dried on patios for 7-8 days. Finca De Dios is known and beloved for its classic Guatemalan acidity and sweetness– a beautiful orange-like acidity, crisp mouthfeel, and chocolatey depth.
